| Corn on the Cob with Scallion Pesto |

Ingredients:

4 scallions, chopped |
| |
1 large clove garlic, chopped |
| |
1/8 teaspoon black pepper |
| |
4 ears corn on the cob, shucked |
| |
1/4 cup extra virgin olive oil |
| |
1/4 teaspoon salt-free seasoning |
|
| |
Directions:
Boil corn on the cob in plenty of water for 10 minutes. Drain.
Meanwhile, make pesto by blending scallions, extra virgin olive oil, garlic, and seasonings in a blender until smooth.
When corn is drained, use a pastry brush or the back of a spoon and spread pesto over the corn. Serve hot.
